The vineyards provide the perfect temperature and conditions for producing a ripe rose. Shiraz was the grape of choice because it has wonderful colour and gives fresh, yet structured wines that can be enjoyed as an aperitif or with food.
The grapes were hand-picked and sorted to ensure that only the finest were used to make Cherub. They were gently crushed and transported by gravity alone to the tanks below in the winery, where they next underwent 'Vin d’une Nuit'. This is a process of cold soaking, where the juice is left in contact with the skins overnight to fully extract colour and infuse the wine with flavour.

"We strive to protect the environmental integrity of our wine production by adopting a sustainable winegrowing initiative, remaining abreast of the latest developments in grapegrowing and pest management techniques, so our wine lovers can enjoy the best possible wines".
"The use of rainwater, harvested in the large water reservoirs and the use of computer controlled irrigation, minimizes our use of water in the vineyard, thus allowing to produce the very best grapes possible with the minimum amount of water to be used. Greywater, produced by our production facilities is recycled before it returns to the environment".
"Our internal campaign to conserve paper started raising everyones awareness about the importance of a long term commitment for energy and tree conservation, encouraging the minimization of paper usage across the winery. The use of recycled paper helps us preserve the forest ecosystem, caring for the clean water, wildlife habitat and biodiversity they shelter, and directly reducing the amount of paper landfilled".
